Our very own Paul shares his delicious granola recipe! Enjoy!

Ingredients

  • 1 cup raw pepitas (pumpkin seeds)
  • 1 cup raw sunflower seeds
  • 1 cup shredded coconut (unsweetened)
  • 1 cup sliced almonds
  • 2 cups chopped pecans
  • 20 dates, chopped finely
  • ½ cup coconut oil
  • 2 teaspoons cinnamon
  • 3 teaspoons vanilla
  • Dash of salt (optional)

Method

  • Preheat oven to 180° Celsius
  • Prepare seeds, nuts and dates in a bowl
  • Melt oil and add cinnamon and vanilla essence
  • Add oil mixture to the nuts and combine
  • Place mix on a baking tray and pop in the oven for approximately 15 minutes
  • Remove and allow to stand to cool
  • Enjoy with yoghurt, fresh raspberries and cut banana!
